Roasted Chicken Pieces

4 lb. Moody Free-Range Chicken cut into serving pieces

Potatoes cut into serving pieces...enough to serve your family. (any variety will work, but reds are my favorite)

Toss chicken and Potatoes in a generous amount of olive oil. 1 tbl minced garlic.

1 tbl kosher salt. 1/2 tbl black pepper. Add enough rosemary for flavor and eye appeal. Place in shallow pan

This can be done the night before but be sure and use a refer-to-oven dish. Place in oven heated to 400 degrees and bake uncovered for a little over an hour. No need to turn chicken or potatoes during baking. The chicken should have a nice brown color when done. Potatoes should be fork tender. Some nice broth is produced to spoon over chicken when serving. Another option is to pour broth into sauce pan and use to steam fresh spinach on top of gthe stove. It will take a lot fo leaves to serve two. This chicken dish is great as a cold snack the next day!
