Turkey Breast Parmigiana
Serves 2 - 4

2 lb Boneless Skinless Turkey breast
3 Tbsp. lemon juice
1/3 c. oil
1/4 tsp. salt
1/4 tsp. white pepper
1/2 c. flour
1/2 c. grated Parmesan cheese
4 - 6 Tbsp. butter or oil
1/2 tsp. oregano
1/8 tsp. onion powder
1/4 tsp. garlic powder


Cut across the grain of the turkey breast into 1/2 inch thick slices. Pound turkey into 1/4 inch thickness. Beat or shake together the lemon juice, oil, salt, and pepper and marinate pounded turkey 30 - 60 minutes.

Combine flour, cheese, oregano, garlic and onion powder and coat turkey pieces generously. Heat butter and saute turkey 5 minutes each side, adding more butter if needed. Serve immediately.
